The competitor is required to create a pasta dish for 2 covers using one of the Dell’Ugo fresh pasta varieties listed below. The dish can be aimed at either a sweet or savoury course. Competitors should pay attention to this being a pasta class and the judges will be looking for at least 50% of the dish to be pasta. Judges will also be looking for chefs to show their skills, not only in cooking of the pasta but the preparation, cooking and balance of the ingredients they place within their finished dish.
