Plant-forward is a style of cooking and eating that emphasises and celebrates plant-based ingredients – including fruits and vegetables (produce); whole grains; beans, other legumes (pulses) and soy foods; nuts and seeds; plant oils; and herbs and spices. Competitors will have 30 minutes to create 2 plated portions of a main course dish suitable for service in either a casual dining environment or in a fine dining restaurant, where plant-based produce is to be central to the plate and the “flavour hero”.
